古代穀物スペルト小麦の全粒粉が土台となり、黒糖ときび糖がやさしい甘みを織り成します。グラスフェッドバターが芳醇な香りを添え、カカオが味わいに深みを。裏面に施されたカカオグレーズが、そのコクを一層引き立てます。スキムミルクパウダーとバターミルクパウダーから生まれるまろやかなビスケット本体に、海塩のほのかなアクセントが加わり、ひとつひとつの風味の輪郭を際立たせます。

Ancient-grain whole spelt forms the foundation, while brown sugar and raw cane sugar weave in a gentle sweetness. The skin is shaped from Hokkaido "Dolce" cake flour with a touch of sake — refined and moist — layered with raw, unfiltered organic honey. The filling, slow-simmered Hokkaido Dainagon azuki, blends the deep sweetness of brown and raw cane sugar with a whisper of rum and the tightening touch of sea salt.

AOP認証の発酵バターと、放牧飼育で育った牛から生まれるグラスフェッドバター。乳脂の清らかな香りと発酵由来の奥行きが重なり合い、口に含むとほろりとほどけ、豊かな余韻が静かに広がります。甘さは、精製を抑えたきび糖と有機黒糖を選び、ミネラル感とやわらかな甘みを重ねました。海塩が味を結び、風味のバランスに凛とした輪郭を与えます。

AOP-designated cultured butter meets grass-fed butter from pasture-raised cows — the pure note of milk fat and the depth of culture layered together. 白身と黄身をそれぞれ丁寧に仕込む「卵泡仕込み」の古典的手法。全卵にさらに黄身を重ね、薄力粉と強力粉のブレンドが、芯の通った、きめ細やかな口あたりを生み出します。ハチミツとアーモンドプードル、ヤギミルクパウダーが静かに折り重なり、余計な香料や保存料に頼らない、素直で芯のある風味を描きます。

Whites and yolks are prepared separately in the classical "whisked-egg" method. Whole egg is enriched with additional yolk, and a blend of cake and bread flour gives the crumb its quietly resolute fineness. Honey, almond powder, and goat-milk powder layer gently — a sincere, centred flavour that needs no added fragrance or preservatives.
